I think you can start by copying a good config and tinkering with it. You can find good examples from unixporn or https://github.com/adi1090x/polybar-themes. You should start with a few basic modules first, and then add more modules when you're comfortable.
I was in the same boat, the wiki seemed too much at first so I downloaded a few configs from others who had bars set up that I liked. After a while I still hadn’t gotten anywhere towards understanding how to make it “my own”. I then stumbled upon polybar-collection and everything just started to click for me. The configs and custom scrips are set up in an easy to understand framework, whereas all of the others I looked at were way over complicated. Take a look, I ended up building my own theme using this framework and feel much better about how to customize it to my needs.
