Myself I'm using Joplin for this. I store the database on a WebDAV share and it syncs everywhere. However I'd like a plain text solution more than a database. There's an app called Notable which does exactly that. Storing all your notes as plain text files in a directory structure. I very much like this approach but sadly it isn't Open Source so I'm not sure if I want to use it or not. I'm looking for some other insights and inspiration. Thanks :)

I use Joplin Pretty clean and simple, easy to nest things from notebooks and sub-books with notes on every level if wanted. I use Nextcloud and WebDav to sync between devices but there's a bunch of sync options. Some features I use are Note history to be able to roll back or restore notes. Web clipper to export webpages whole or partly and simplified.

I use bookstack it's easy to mount, docker, backups and I always can access to it from the Internet. Selfhosted obviously...
