What I'm primarily looking for is something like Postal -lite. I don't need the extensive feature-set Postal has, but it's ability to conditionally forward emails to other SMTP servers and HTTP endpoints. This would give me a single place to point my local services to and from there I could configure my upstream relay.

Not what you are asking, but you might still want to know about Mailrise SMTP-to-Apprise which lets you setup a ton of endpoints and control them based on what email address you send to. It's local.
