For my server, what I do for such use-cases is simply spawn in a player via CarpetMod. e.g.
If running on Linux, you could use a use mcron and add that to the systemd script
Personally, I'm a fan of the "Auto-Crafting Dropper," part of the CarpetExtra mod. Autocrafting that isn't overpowered. Really nice to be able to compact iron/gold/etc farm output into blocks. Video overview:
