You can run all of the apps you mentioned on either choices but Electron/Chromium apps will run Xwayland as it's not native just yet. You will also need to run firefox with a variable for it to run natively.
You can follow this guide (just ignore the KDE stuff), to get you booted into the minimal environment. Then, install GDM and Sway which should pull in all the dependencies you need for a barebones desktop. Also I recommend you install the @multimedia and @networkmanager-submodules package groups to make sure your sound and network stuff just works. Hope thats enough to get you going.
