There's a plugin called Monk's Little Details, which does a lot of things actually. One of the things it does is add a toggle to wall editing mode that will make it so that, if two (or more) walls have an endpoint on the exact same spot, dragging that node will move ALL the connected walls at once, so they stay stuck together. This would give you a bit of the "stretch and resize" you're asking for, although you need to move each corner node one at a time.

There's also DF Curvy Walls, which I haven't used myself yet, but I'm planning to add it soon. This helps you with drawing curved walls. (It doesn't actually curving walls, it just approximates a curve with lots of straight segments.) This together with Monk's "keep nodes together" tweak could make drawing odd wall shapes much easier, I think.
