The only major issue I encountered was my USB keyboard and mouse not working when I initially tried to install 11.3.1. I'd mapped my USB ports in Catalina using USBMap.kext but that wasn't working so I swapped it out with USBInjectAll.kext + XhciPortLimit=true which didn't work either. I did a little digging and discovered the issue was caused by changes made in macOS 11.3.1 (and possibly 11.3) so I created a new installer from a copy of 11.2.2 and that worked a charm. I installed using macOS using USBInjectAll.kext + XhciPortLimit=true then mapped my USB ports post-install using Hackintool which generated the relevant SSDTs and USBPorts.kext. I then deleted USBInjectAll.kext, added USBPorts.kext, changed XhciPortLimit from "true" to "false", crossed my fingers and updated macOS to 11.3.1. Mission accomplished.

For reference, here is my config.plist (minus SMBIOS info) which I created using the sample.plist provided with OpenCore as a starting point then added the relevant patches, quirks, kexts and SSDTs for Kaby Lake. I used iMac18,3. You can generate your own SMBIOS using GenSMBIOS.
