Autorandr works really nice for me, it can execute scripts before and after changing display setup (restarts bar, sends notification etc), you can save multiple setups and it will recognize the proper one when displays are connected. https://github.com/phillipberndt/autorandr
Have you ever tried umonitor? I've been happy with it, but I haven't tried autorandr yet.
