Some of the GIFs are generated by the contributor (or other contributors), which is why they end up using different themes and everyone has their own workflow. I use OBS Studio to record the window, then convert the videos using gifski, but Peek is also great.

Not OP but the best options I've found are Kap on Mac, and ShareX on Windows. No idea about Linux. I'm sure there are dozens of options that almost work! :-P
