Sounds like Docker is something you might wanna take a look at. I work mostly with PHP frameworks that supply Docker support out of the box, but maybe something like http://devilbox.org/ will cover your needs.

When using Docker you can just spin up a container while you are working on the project. When switching projects, just start and stop some containers and you are good to go. There are some tools that can help you speed up this process: docksal, ddev, or lando (and there might be others that I forgot).
