For me atleast configuring polybar is a pain still now as I don't understand anything tbh. I just use this config for polybar and making small changes to the config and seeing how it goes. This might be a good starting point if you wish to play with polybar. Check out this, it's a playlist on customisation from a channel called EF Linux. He makes some amazing videos, you could gain a bit of knowledge from there.
