I've heard bad things and myself had a horrible experience on matrix.org HS, hence why most people go to ptio servers or end up hosting themselves, the easiest solution being just ems hosting. (though 3 times as expensive as e.g. a hetzner vps that you "waste" [or spend, depending if you like it or not] time - setting it up for a bit).

Besides Matrix there is also Mattermost which can be used with BigBlueButton integration to have quite similar possibilities in screen sharing and voice chat to Discord. Otherwise there is also Jitsi for meetings in small rooms.

Github is indeed owned by microsoft. Gitlab or gitea are pretty good and feature comparable alternatives. But while matrix and element do use github to some extent, it doesn't really effect the integrity of the project itself and microsoft cannot directly control the projects. Moving to alternatives is a viable option and github cannot really stop matrix or element from doing so. Some matrix clients like fluffychat are hosted on gitlab.
