    I think what you’re looking for would be a “split-tunnel” approach. Also Wirehole comes to mind as a self-managed solution for a WireGuard/Pi-hole setup (and has a step for split-tunnel). PiVPN is another help for a WireGuard or OpenVPN setup that can auto detect Pi-hole running and configure things accordingly.
