There's mrustc, an alternative compiler that uses C code as an intermediate representation, however it isn't complete and I don't know if it supports the latest features.
Besides `mrustc` that was mentioned in another comment, you could try emitting LLVM-IR and translating that to C later. Here's a project that attempts this: llvm-cbe.
