Idk about ec_sys, I couldn't find it on search.nixos.org, but since it's a kernel module it might just come with the kernel idk.

I have not done it myself but I bet you can customize your kernel https://nixos.wiki/wiki/Linux_kernel with the proper git source code https://github.com/torvalds/linux/blob/master/drivers/acpi/ec_sys.c and get it working to customize your fan profiles. I for one just got a pwm fan hub controller https://www.newegg.com/p/1YF-001G-002E5 and left relying on software to manage my temps behind.
