IMO, the reason to pick one of these is to have a quick way to getting LSP setup properly. Navigation setting up completion, definitions, formatting, LSP-based highlighting, linting, etc., without using one of these is a lot to learn how to do. If you're using a language where LSP support will help you, then go for it; I most recently used LazyVim, before that I used LunarVim/nvim-basic-ide.
I really like Astronvim but I've been trying to extend it for the last few weekends and have experienced a bonanza of errors. I realized a few days ago that Astronvim Community offers loads of 'quick-start' plugins. Definitely take a look here https://github.com/AstroNvim/astrocommunity.

NvChad is a base config, so that should be good to expand. However, I started with lilvim (great minimal config), and now I'm using a modified version of kickstart.nvim. I spent time reading through all the files, so I know where everything is and what it does.
