Fast-forward to today and I'm still using emacs and org, but for a lot more things.. I track my todos with it(and I could have them in my calendar as well, with deadlines and everything), I use org-roam, which allows me to search documents instead of having to know their filenames, I sometimes insert "live" code examples, which are similar to what jupyter does for python(ie. you write down a code example and at the push of a button, the code is actually executed and the result is shown)...
It was then when I learned about org-mode and I always wanted to learn emacs and be one of the cool kids.. And while it took me about a decade more to come to terms with emacs in general, I immeditately loved org..
I’ve used https://docusaurus.io/ for a couple personal projects. Haven’t used any themes, plug-ins, etc. but it’s been fantastic for writing up markdown, and publishing it somewhere
I use Mkdocs (https://www.mkdocs.org/) Store all documentation in Git repo in Markdown format and upload static files to selfhosted web server.
