I started with using Xone (https://github.com/medusalix/xone), letting me to use the dongle instead of BT and allowing steam to recognize the controller as elite and actually let me remap the paddles through steam input. The issue is that they don't actually work, nothing happens when you press the paddles.
This seems to be related to Linux not recognizing the buttons, as if you look at the controller in input devices it only list buttons up to 11. According to this page (https://github.com/AntiMicroX/antimicrox/issues/685) the back paddles should map to buttons 11-14. Windows user have a similar issue with the latest controller firmware (mine has already been rolled back) where windows stopped recognizing the buttons. It seems Linux did not recognize the button presses till kernel 6.1 (https://www.phoronix.com/news/Linux-6.1-XPad).
I'm pretty good with tech but I'm still relatively new to Linux, I was unable to find out what kernel SteamOS is built on or where to go from here. On a side note I know (https://github.com/paroj/xpad) exist and has support for the back paddles but it only works wired. Using a 10ft wire to play games on my couch completely defeats the point, I'd rather just play my deck on the couch at that point. If someone can point me in the right direction or help me get this working it'd be greatly appreciated.
