Joplin is a full featured notes app with markdown support, image/website/screen clip insertion support and so much more! Syncing between your mobile and desktop can be done with Joplin’s paid cloud service but they also support S3, Nextcloud, WebDAV, Dropbox, OneDrive or the local filesystem (syncthing?), so you don’t have to pay more for their cloud if you don’t want.

If you’re looking for more of a wiki setup, try TiddlyWiki. This one has a ton of syncing options, hosting options and more. Will require some technical ability to setup but they offer paid hosting.
