There are a few other note taking tools that do not have emacs integration yet, Rnote is pretty good. I even made a pretty similar tool myself (with infinite canvas) but was never quite satisfied with the result. Good news is that xournalpp does have infinite canvas in the works: https://github.com/xournalpp/xournalpp/issues/1174
By Xournalpp-mode do you mean org-xournalpp? I was not able to find a package named Xournalpp-mode.
