If you want something more like NAS or shared folder, you should check out TrueNas. You can build your own system from a PC and a few hard drives, or go for a bit more professional solution and buy a NAS hardware and disks from them.

If you want something like onedrive, you could check out NextCloud (or OwnCloud). You can host it on your machine, or pay someone (eg. a server hosting company) to do it for you. (Note that the admin of the server where NextCloud is running does have access to your files, but probably there is a strict contract between you and not just random ToS without any rights.)
