A cross-platform music tagger powered by the MusicBrainz database. Picard organizes your music collection by updating your tags, renaming your files, and sorting them into a folder structure, exactly the way you want it.
I don't think this is possible with Plex, but I've used MusicBrainz Picard https://picard.musicbrainz.org to tag mp3s with very little user input (depending on how well tagged and named the files are already). I think it's probably the best bet. It is a little confusing at first, and will choke if you try to do your whole collection at once, but it is very solid.
