    I am not familiar with that distro at all, so no idea. KDE Plasma is fine, I use it myself (with BSPWM as my window manager, but that's irrelevant)

    Personal preference. I use system Wine because launchers are just bloat to me. My distro is Void Linux, so the Wine package from the repos is always up to date. If you use a stable distro like Ubuntu you might want to use a launcher if it gives you access to newer Wine builds.
