I believe both Bottles and Lutris are available on SteamDeck from the built-in Discover app store. These are popular programs for managing Wine/Proton prefixes (fake Windows environments; sometimes referred to as "bottles" because of the Bottles program; Steam does that as well for every Windows game, just automatically).
Have you considered trying 3rd party Proton versions? Proton-GE is a popular one, it can be installed using ProtonUp-Qt, which is available in the app store

It might be Proton's or Steam's fault. You can try installing Proton Tkg through ProtonUp-Qt.
Wine-GE works fine
