Obviously depends on what exactly you're doing but I'd just go with the most common ones, so basically just x64 for Windows/Linux/Apple (example, though not in C++) and whatever ARM the Apple M1 is. People using exotic platforms can compile for themselves, there's really no need to cover dozens of different setups when it's effectively only running on 2 (maybe 3 if you have Apple users).
