You can use separate drives with individual datastores. ESXi has no software RAID but if you want to combine the drives in RAID, you could setup a small openmediavault or Starwinds SAN and NAS VM, RDM the drives to it: https://kb.vmware.com/s/article/1017530, configure RAID inside that VM and share back over iSCSI or NFS to ESXi.
