You need to install both vkd3d-proton and dxvk to the wine prefix to play D3D12 games. Note that wine 7 is too old for the latest versions of both of these, so either upgrade wine, or try DXVK 1.10.3 and vkd3d-proton 2.6. Probably better to use something like lutris or bottles to set it up for you if you're unsure how to do it.
