The problem is, they use a Deployment and not a Stateful Set. This means if I can't raise the deployment count unless I stop using persistent storage.

With the sample apps from the opentelemetry-lambda repository the Lambda part itself was easy to implement. What took me some time was to provide the jaeger Fargate service with IaC ouside of an k8s environment. But with ECS and ServiceDiscovery that was easy in the end. This should be even more simple in an EKS environment with the jaegertracing helm-charts.

If I remember correctly DataHub requires a MySQL DB, Elasticsearch, Kafka, and potentially a Neo4j instance. So, a lot of stuff. There are nice helm chart here: one with the application itself and one with the dependencies. But,if you want it in production at scale, you might consider reviewing the dependencies and deploy them separately.
