So to answer my own question somewhat (for anyone else looking for a similar bot). I have found many-many logging bots however most filter out events by bot authors but logger.bot does allow bot event logging (not by default) however it does not capture specific events such as guildScheduleEventUpdate updates only basic messageUpdate so it does not work for my purpose. I have found a few bots on GitHub that allowing the logging of all events so I will have to spin up and instance of this myself to solve my problem.
