We use https://github.com/uber-go/automaxprocs after we joyfully discovered that Go assumed we had the entire cluster's cpu count on any particular pod. Made for some very strange performance characteristics in scheduling goroutines.

Source-level debugging is what we have in mind; we have done a lot of work on Wazero and as part of https://github.com/stealthrocket/wzprof to enable it.
It is still not a solved problem, and it requires support for each programming language that does things differently, but we're working towards this.
