There's also Notepads which looks prettier than Notepad++, but has some minor analytics built-in, but is not tracking any "user privacy related info" and is not "sending any of your typing or files over" to the developer and since the software is open source that can be verified by anyone. Since it's a Microsoft Store app it will have some basic diagnostic info sent to Microsoft, but that can supposedly be disabled in the global Windows settings.

There were multiple efforts (and forks) to re-implement it and make available on multiple platforms on top of mono. Pinnacle of that effort is FNA which is open-source and support at least GNU/Linux, macOS, Windows, Nintendo Switch, Xbox One, iOS, tvOS and Google Stadia. You can find a long list of games using it here. This makes porting fairly easy and cheap.
