Ahah, I found the tables! You have to go into Zim's settings and enable them as an addon in there. Ty, I thought there was no support whatsoever (other than putting pictures of tables in https://github.com/jaap-karssenberg/zim-wiki/wiki/Create-a-t... ).
Indeed it still seems a bit limited. Nothing like Firefox's in-built table editor used to be (this is the one in Thunderbird, which is quite nice). I wish they hadn't removed that feature :|
Treesheets is a beautiful program, but I'm too much of a pen-and-paper + plaintext notes person to appreciate it properly.

It's a boring story. I tried to organize my notes/data/knowledge using existing apps, but none of them fit my needs, so I built an app which does fit my needs: https://github.com/zadam/trilium/

NC Notes was simply too simple. I tried Trilium Notes, which is awesome, but ultimately landed on BookStack for my wiki/documentation/notes. For notes alone it's a bit too much, but it handles them well enough and for long term documentation it's just perfect.
how do you keep track of notes, todo lists, links, ...?

Trilium is what I use for journaling. It does exactly what you want (and much more if you want to take advantage of it). It has the ability to be customized through scripts, and one of the examples it comes with is adding a button to create a new journal entry for the day. It also has a calendar button that lets you go to the journal entry for whatever day you select. In both cases it will create the note if it doesn't exist.

I'm looking to move from Microsoft's OneDrive / ToDo / OneNote
There are great note taking apps like Joplin, Obsidian or Trilium Notes, the latter being my favorite of the three and sadly not widely known (yet). They aren't as well suited to more complex notes / project documentation, though. Ultimately, while certainly nice, they don't offer that much more than NC Notes. Which is why I went with BookStack instead.
Try trilium? https://github.com/zadam/trilium
