is there a docker alternative for x applications
Instead of using a homegrown solution, check out x11docker. It attempts to safely allow you to use x inside a container. There are certain cases where a malicious actor could take over your computer if you don't mount the relevant things safely.

Can you sandbox epic store ?
What OS do you use? You can probably do that with Docker. Docker in it self doesn't support GUI applications by default. There are solutions to run GUI apps in docker. In linux you could install winepak image via flatpak and sandbox it. I don't know how this is done in WIndows because I really don't use windows. Maybe you find a way to do it with docker.

That said, would there be any benefit of keeping the x11 session in a separate pod vs adding that container to the same pod (such as x11docker*)?
