Lastly, if you need to access Windows VM, I recommend using QuickGUI. It'll setup everything for you quick and easy. If you need seamless integration and want to access your Ubuntu files from a Windows VM, refer to WinApps instead.
My high school students' first exposure to Garuda. They were blown away with how cool everything is.

Use QEMU-KVM using virt-manager. This is more or less the preferred way for most people to run VMs on Linux, as it gets you the best performance and is the most versatile as it allows you to use GPU passthrough and winapps. (note: the registry part in the guide is mainly useful if you're going to use the winapps remote-desktop and the XML part is only if you're going to have it on and idling in the background all the time, as it would otherwise make it noticeably more sluggish)

I'm trying to make Windows apps from a virtual machine open in windows which "fit in" with other app windows from Linux, kind of like Parallels Desktop's seamless mode. Since it isn't availble for Linux, I've searched for alternatives and found Winapps (which is no longer maintained and I can't get it to work) and also Winconn (which is really, really old and isn't maitained)

Yes, I game on Linux exclusively. Most of my games run native on Linux (Minecraft, The Portal and Half-Life series, the Tomb Raider Reboot to name my favorites) and most other things I play run relatively well with Proton. I can't really name those however, since there really aren't many games that I need proton for. If you plan to use a Windows VM, make sure to check out Winapps: https://github.com/Fmstrat/winapps It lets you run windows applications in a VM and integrates them into your system (entry in your DE, can open files from Dolphin/Nautilus) and you don't see the entire Windows session, only the apps that you want to use.

You need to zero the virtual machine bit on the guest CPU (see VirtualBox CPUID documentation) and set lots of hardware parameters to values that appear genuine (see OpenCore PlatformInfo documentation)

If you can't boot the USB, you won't see the version. In that case, check the date on the OpenCore.efi file in your EFI folder. Then go to https://github.com/acidanthera/OpenCorePkg/releases and look for the release date for your version of Open Core.
