Finally got my hands on the Pixel Watch. Will activate LTE soon.
There are plenty of open source watchfaces out there. Check out this github repo by Google. It contains best practice examples all around wear os including watchfaces.

WearOs: Complications without borders
Main documentation about how to make watch faces under Wear OS seems to be the WatchFaceKotlin example. This example contains borders around complications. Some installed watch faces don't have borders around complications.

The state of watch face development on Samsung watches
I converted my codebase to Kotlin a few years ago, but I am struggling to move to new wear libraries. There is so much work to do, because Google, in their immense wisdom, decided to change everything. And don't even get me started about the Decomposition API (option to add second hand in ambient mode). CameraX vs Camera2 (library development)
For the device formats, what you get on CameraX should be what you get on Camera2, but you can verify with the Camera2Video sample app. It lists the available resolutions and framerates (which notably calculates it in largely the same way that you're already doing).
- As an amateur photographer who most often shoots with a DSLR, I'm quite impressed with the Google Pixel 7 Pro suite of cameras.

Questions on native code access to android APIs / hardware / devices
It's been many years since I used camera APIs, and only camera1. I don't have experience with camera2 and cameraX. The android camera docs https://developer.android.com/training/camerax/choose-camera-library lists the available libraries and in additional resources at bottom of pages, there are samples available.
