You can't choose. The configurations are decided after you set up v2ray on your server. I am not familiar with the script you are using but usually it should print out the configurations after installation. Check if there is any command of x-ui that can print out the configs. This is the script I've been using you can try it if yours doesn't work.

No shadow socks does not work well now. Try v2ray. There are scripts which can automatically set up it, like this

Also, one other preferred thing, UUID instead of different ports. This is possible using this script, however, it is v2ray only and not stable enough for me. My plan is to use only 443 port.

I haven't done a Portainer first or Portainer-centric deployment, but I have used Traefik quite a lot in the last few years, including a LAN whitelist, and integration with CloudFlare. Not sure how far along you are on using Traefik, but Ive got it all posted to GitHub if you have any interest in poking around or have any questions.
