Help with V2ray settings
You can't choose. The configurations are decided after you set up v2ray on your server. I am not familiar with the script you are using but usually it should print out the configurations after installation. Check if there is any command of x-ui that can print out the configs. This is the script I've been using you can try it if yours doesn't work.

Also, one other preferred thing, UUID instead of different ports. This is possible using this script, however, it is v2ray only and not stable enough for me. My plan is to use only 443 port.

Or just use a bash script like this, enter your cloudflare API credentials and run it in a cronjob every 15 minutes or so. I've been using this for over 2 years straight now and never had an issue: https://github.com/NoniDOTio/cloudflare-dyndns
