They can all be disabled and even "uninstalled" (not really, but what matters in the end is that those apps can't run when in either state). Universal Android Debloater removes Google's bloatware and much more, such as OEM and carrier bloatware, all of which are detrimental to privacy (sources: one and two) and aren't often talked about, apart from a few quite simply useless stock AOSP apps. By the way, the apps analyzed in those papers are closed source, so to show source model is quite irrelevant.

https://github.com/0x192/universal-android-debloater is a pretty good gui tool that uses ADB. Just allow android debugging on your phone and open the exe after draging it into adb files

Is degoogling as worth it if you're on stock android?
I recommend UAD (Universal Android Debloater) as a great tool for the job, as it has comprehensive package lists curated by people that do their research so you don't have to learn the hard way that uninstalling a specific package causes your phone to soft brick. It doesn't uninstall any apps, just disables them, effectively achieving the same effect as uninstalling but being easily reversible and not freeing space from your internal storage, which won't really matter for 128+ GB phones.
