MERN stack deployment
If it’s not something simple and needs to be a separate project altogether: I’ve found that Express works very well with Dokku. It has pretty comprehensive documentation and doesn’t require you to have a full understanding of Docker to work. It also handles the zero-downtime deployment side of things and gracefully restarts your app every time it crashes (similar to PM2).

Tips on scaling a monolithic Rust web server?
In terms of orchestration single server for multiple projects, I use Dokku as personal PaaS for various projects. Most of them not rust based, but still. In my case, the single server 2cpu 2 RAM instance server about 15 projects. Few of them are web servers and others are different telegram bots.

Dokku na EC2 instanci ili DO dropletu. Samo ti treba tvoj domen (mada valjda radi i sa IP adresom direktno). Svaka aplikacija onda bude na svom zasebnom poddomenu.

- Probably a noob question but is there a dashboard that I can run locally and can use to manage my local servers as well as my subscribed VPS (I have three to be exact)

How do you deploy your side-projects?
Check https://dokku.com. Easy to set on your VPS, support Heroku buildpacks and almost-zero-to-none management (assuming you update your server from time to time). And you get Heroku-style deployment.
Running some projects with it for the last 5-6 years and had couple of Dokku versions upgrades - zero issues so far.
Depends... here's some recommendations
[1] https://dokku.com/ - Heroku but self-hosted, deceptively complex, can be a pain
[2] https://vercel.com/ - Kind of a modern replacement, very easy, but can only really run TS/JS
[3] https://cloud.google.com/run - A nice way to run any server in a Docker container, simple but probably not suitable for a front-end
