If I must continue to use Windows 11, what's the best I can do?
using a fork of Destroy Windows 10 Spying (both this and the original program already halted development years ago) to block at least some domains (though this fork was developed in 2016, some domains it blocks should still be up and running today)

Windows Spy Blocker = This will add a bunch of Windows IP addresses to your Windows Firewall. The basic settings should not impede functionality. It should also allow you to switch ntp (how Windows sets it's Clock) to more open alternatives.
