K&R The C Programming Language (LaTex edition)
I was inspired by what the guys did here https://github.com/sarabander/sicp-pdf with SICP. I think it was an impressive effort and the result was jaw-droppingly beautiful.

How do you deal with immutable variables?
It's a pretty heavy book, but for FP you only really need the first chapter. You can get the book for free here, but there is a more readable modern version (same content, but nicer typesetting). You can also watch the recorded MIT class on Youtube if you learn better that way. The book uses Scheme as its language, but the ideas are applicable in any other language as well. I recommend doing the exercises because rewiring your brain is about practice. Don't let the size of the book intimidate you, you only need the first chapter, and if you are already familiar with programming you should be fine (SICP is written for people without programming experience).

A famous book on Scheme that is introductory but theory-focused is Structure and Interpretation of Computer Programs. It's a large book with a lot of exercises. It literally starts from zero and slowly teaches you how to build a programming language with metaprogramming. A great resource for newcomers that are interested in some more theoretical aspects of programming rather than "making mobile apps".
