Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

What App to Use for Notes?
Currently use markdown files + dropbox for sync. I can't seem to stick with a single notes app for any appreciable length of time but having files in plain text makes it easier to switch.
Currently using:
- Obsidian: this one has stuck the longest
- iA Writer: really pretty, seems to be more useful for longform
- NeoVim: I live it in anyway... may as well
- rlg: my own "dump thought to single file w/ timestamp" rust app), very janky, written specifically for my own use-case, standard "there may be dragons here, might eat your computer just for fun, etc" - https://github.com/bryan-lott/rust-lab-log

Yes, there is. The manual way is to press CTRL+d where you'd like a date. Or read the thread at [1] to configure Zim adds the date on Return.

Why and How I use "Org Mode" for my writing and more
FWIW, I ended up doing a lot of org-mode-like things by starting with https://zim-wiki.org a VERY long time ago; I use it for notes, scheduling, publishing my own website, and even slides with the s5 thing.
Somewhere in there, I gave org-mode 2 or so years and eventually gave it up entirely; it just really plays SO un-nicely with literally everything else.
Anyone else looking for this sort of thing, I'd probably point to Obsidian first, but I'll probably stick with zim for the time being.

What App to Use for Notes?
I have used many open source notes taking apps. My goto used to be Zim Desktop Wiki [0] but its just a desktop app and the was no built in sync solution. On mobile I used Markor [1] which understood Zims syntax, as well as markdown.
Due to lack of mobile client and built in sync options I moved to Joplin [2]. Its markdown, cross platform, and i can sync with WebDav. People don't like that its SQLite based, but honestly worse com to worse your notes are an export away, or you can just open the database yourself. Im happy with it.
I always recommend Treesheets [3] though, excellent for brainstorming/rapid note taking.

I'll slightly modify your argument; because Pure HTML does suck:
Why don't people make static sites with a simple "Markdown-or-Similar to HTML" converter, CSS, and vanilla JS...etc?
(This is what I do, btw -- http://zim-wiki.org + a template)
