I made a thing with Ruby; looking for feedback! Xferase is a photo library management daemon for Linux.
Photein uses Minimagick for image management and conversion. Have you had a look at ruby-vips? From what I hear it should be better/faster/use less memory than ImageMagick, especially for the standard image formats.

what is the best/easiest way to render text as image with ruby on rails?
You'd probably be best using imagemagick, https://github.com/minimagick/minimagick for example would allow you to create an image that is just some text. There are a bunch of tutorials across the net on how to pass commands into imagemagick to do this.
