Google maps tracking alternative
Some people have issues installing Own Track's Recorder - This one is very minimal and saves your locations to an sqlite file.

What are your top self hosted services that you are very satisfied with ?
I also use OwnTracks on my phone and installed OwnTracks Recorder on my server. I skimmed over my blog post for that but I don't think there's much useful for you there.

OwnTracks – keep track of your own location
As far as I know, owntracks doesn't actually store location history, it only defines a protocol for exchanging current location info between programs. If you're using their "official" recording server, writing a script to import history looks super easy [1].

Open-source, self-hosted location tracking with OwnTracks and Grafana
After setting up the client side, a server-side component to receive the OwnTracks app's requests is still missing. OwnTracks ships with its Recorder, which is a small and simple web application written in C. However, I did not like it a lot, as it does not look particularly beautiful and is very limited regarding its functionality. I rather wanted to visualize my data in Grafana. But to get it there, it first needs to be persisted to a database.

The Open Source GraphHopper Routing Engine 8.0 Released
Well I think what he means is that we dropped the explicit support of Android and the example app with offline maps (Mapsforge), see this issue: https://github.com/graphhopper/graphhopper/issues/1940
But offline routing should still work on Android. But as you need JDK 1.8 support this will exclude a few older Android versions and devices, I think.

Graphhopper. It has an Android client that uses its web service. You can also try out the web app.

Dangerous pedestrian crossing
This is now fixed and deployed. See the route here and the specific fixed examples here. Note that you can still find the dangerous spots via clicking the "stop" icon below the route information multiple times. But this is likely a result of the bad cycling infrastruture as cycle.travel contains these short dangerous parts too and if you do such longer routes for Germany it does not happen.

I Made A Way To Find Gravel Roads!
I'd suggest refactoring to use a self hosted version of Graphhopper (https://www.graphhopper.com/open-source/ - they have a docker image you can use and pass in an OSM file to build a graph on) or OpenRouteService to limit your cost exposure to google.
