A common question about how to find repositories to contribute to
Github has millions of projects, some large fraction with more than 100 stars, so it doesn't seem like you are searching very hard. But more importantly, why "100 stars"? Stars are meaningless and arbitrary. Many developers use stars like bookmarks. I just did a quick search and noticed a project like realworld (just a demo for learning, 65 contributors) has have more stars than Bitcoin (900+ developers, perhaps you have heard of it?)

App for Conferences
You can check out eShopOnContainers as a reference architecture if you want, but (assuming this is meant to be somewhat of an ad hoc solution rather than a paragon of software engineering) I'd minimize the number of deployable assemblies (1 + tests if possible) and avoid Docker, again unless you have a specific reason to use it.

This Microsoft repo on GitHub has full fledged system composed of many microservices, including a web application. The front end, tho, is in Angular. How do I convert this project to just a WebAPI
Failing to grasp what the Infrastructure project is for just goes to show how little you understand the architectural style and its implementation across .NET. Every other major example app implements it the same way, see Microsoft's official example eShopOnContainers
