Check out Zephyr OS and Platform IO. Zephyr is part of the Linux foundation and has similarities to Linux with how it performs hardware abstraction (device tree). Platform IO integrates with other frameworks including mbed and Arduino.

PlatformIO together with avr-stub can be used to do source level debugging but there are some caveats.

Do you know some sbc or soc that can be programed to run rtos and c++ on top?
Look into https://platformio.org/, it can abstract over a few RTOSes, and can show you which OSes work with which chips/boards.

If the HW looks like it works, you could also try alternate programming software. (e.g. TinyGo or PlatformIO)

Issue with Adafruit ESP32-S3: COM port switching, etc.
You might have better luck with PlatformIO than the Arduino IDE; it's better at automatically choosing the serial port, though I can't say I've used it under Windows.

Ask HN: Best books to learn embedded systems?
Will you be doing embedded Linux? Embedded RTOS? Bare metal? Microcontrollers? SoC (say, FPGA with a hard processor core)?
You can do a lot with QEMU. https://bootlin.com/ has a lot of great, free training material.

Learning to cross-compile, do embedded debugging, the process of booting an embedded system (which varies depending on the answers to the above questions), learning how to read a technical reference for the processor you’re using as well as for peripherals you’re likely to interact with - SPI, i2c, UART, maybe PCIe, are all handy skills. Learn a bit about JTAG, hardware, reading schematics, etc. Even being able solder is helpful.
There may be books (I had a great embedded Linux book when I started) but there are lots of online materials too. Check out https://platformio.org/
There are fun embedded boards and projects for microcontrollers too - micropython on an rpi pico, tinygo, eLua, etc.

Since most of the time would be spent decoding json, you could try to cut this time using https://github.com/bytedance/sonic or https://github.com/json-iterator/go, both are drop-in replacements for the stdlib, sonic is faster.

Polygon: Json Database System designed to run on small servers (as low as 16MB) and still be fast and flexible.
Json-iterator (https://github.com/json-iterator/go), you can replace all of encoding/json with this. It does the same thing but it's faster.

How can we umarshal a Big JSON effectively?
Do you want to look at every field all at the same time? If not, you can pick out individual fields. There's other packages such as https://github.com/tidwall/gjson or https://github.com/json-iterator/go that let you pass in paths such as "a.b.c" to extract single fields.

Designing a config API for microservices applications built using Go
For each Go type used within the config, we generate a separate unmarshaller function. The unmarshallers use json-iterator to process the output from CUE, while tracking the path within the config to the unmarshalled value. This path tracking will allow the function to check if live overrides have been provided on that path and return the override instead.

https://github.com/json-iterator/go an alternative JSON encoding package which allows to stream (flush out) encoded data as soon as it's able to (which is in contrast with the stock package which buffers everything until the encoding is known to be complete and OK).

Some Go(lang) tips
What to use Easyjson is about the top of the pack and it's straightforward. The downside of efficient tools is that they use code generation to create the code required to turn your structs into json to minimise allocations. This is a manual build step which is annoying. Interestingly json-iterator also uses reflection but it's significantly faster. I suspect black magic.
