Here's a rough guide I threw together to give a better idea. Feel free to reach out with any feedback or questions. It should be noted that over at pixelcade.org, they have released a new version of their software that can do some ticker type capabilities. It's just getting started, so not as polished, but shows great potential and may be a better solution for those not comfortable with modding.

Tweaks for Dreamcast - if I can’t get a Dreamcast game running very well, what are some tweaks I can do in the menu to see if I can fix it ? And are the tweaks game specific or will it tweak all of Dreamcast as a whole ? Also how do you get widescreen - thanks

The audio and control latency on Super Mario Bros is a deal breaker.
Your best bet will be with the new released R-Cade OS/Legends Unchained https://github.com/retro-center/rcade_releases/releases. It requires to you to upload your own roms but will play lag free since it bypasses Atgames software while playing games.
