You should use a version manager tool like jenv to manage different versions. Personally I use sdkman which is supported on Unix like platforms including macOS.

For this, I generally lean on SDKMAN which lets you to easily download, install, and manage different versions of JDK. I definitely recommend it if you don't want to deal with how the Ubuntu team handles JDK. Hope this helps :)

Another option is to use something like SDKman! To manage alternate JDK builds. (https://sdkman.io). Once you have it installed run “sdk list java” and you’ll see various builds of open JDK with JavaFX built in. Make sure you only look for builds for aarch64.
