I'm aware of TodoMVC, kind of THE benchmark to be able to see how different frameworks solve the same problem and what that code would look like. I wonder, is there another similar project, but slightly more complex? Including authentication at the very least?
This might be a bit controversial but mostly authentication is framework agnostic. Usually the part you care about is access rights which is usually handled by your routing library. But I get what you're referring to. Hacker news and medium are weirdly the alternatives you might be looking for. You can checkout realworld and hnpwa to see examples for those in different frameworks.

What's the best site like overleaf except not for latex but for coding?
Aside from generators probably better idea is github. It is full of simple "real life" example apps this and that. They are not obviously actually real life, but give you an idea how you could approach structuring your code. For example https://github.com/gothinkster/spring-boot-realworld-example-app not related to python or anything you mentioned, but there are a lot of these for probably all languages and frameworks.

Is there anything like ASP.NET Razor templates for login, register, manage account and others in Spring framework?
Nothing like that specifically, but you're looking for Spring/Spring Boot + Spring Web MVC. I doesn't do this stuff out of the box in a pre-packaged thing, but there's templates/quick guides out there.
