Two questions.
I use swaywm exclusively so I simply put export in .zshrc but for your case, you can run sway together with exporting environment variables via script. Similar to this one: https://github.com/naibaf0/dotfiles/blob/master/bin/sway-run

App with [app_id = null]
What I do is make a desktop file to launch the app using the terminal with the class option set. Under Sway it then shows up as the app_id and you can then float or whatever you wish to do with it. An example is here from my dotfiles

[ Waybar ] Scratchpad indicator
Made a scratchpad indicator with tooltip contents for Waybar. It's not perfect but it works for me. scratchpad-indicator.sh
